Barbecued Grouper Pineapple Kebabs Easy Recipe

How to cook Barbecued Grouper, Pineapple Kebabs:

  • Rinse fillets and pat dry with paper towels.
  • Cut grouper fillets into 1-inch cubes.
  • Drain pineapple reserving 1/4 cup of juice.
  • Combine pineapple juice, mustard, sherry, brown sugar, ginger, soy sauce, and garlic.
  • Pour mixture over fish cubes; cover and marinate in the refrigerate for at least 1 hour.
  • Thread marinated grouper fillets cubes, pineapple, green pepper squares, cherry tomatoes, fresh mushrooms and onion wedges alternately on skewers.
  • Cook grouper kebabs on a grill over hot coals or under broiler 4 inches from source of heat for 5 minutes.
  • Turn and cook 5 additional minutes or until fish flakes easily with a fork.

How to Fillet a Grouper:

Remove the scales of the fish on both sides. Then make a clean cut behind the gills to decapitate head. Cut away the fillets starting at the top of the main bone behind the head of the fish. Cut out the flesh with a sharp knife, it will almost naturally peel away from the bones. Leaving the skin on makes it easier to cook and more fishlike in appearance but skin is tough and strongly flavored.
