Simmered Creamed Cod Tasty Recipe.


Cod meat is white in color, is moist and lean, medium- to firm-textured, and delicately flavorful with a mild taste. Tender, thick fillets with large flakes that separate when cooked. Cod is a good source of low fat protein, phosphorus, niacin, and vitamin B12, an important source of vitamin A, vitamin D, vitamin E and omega-3 fatty acids (EPA and DHA).

Simmered Creamed Cod - recipe recipe how to simmer cod fish with lemon, potatoes, olive oil, lemon juice, garlic, heavy cream or creme fraiche, and fried bread.

Ingredients:

  • 2 pounds fresh Cod fish
  • 1 lemon, sliced
  • 3 medium potatoes, halved
  • 1 cup olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, pressed
  • 1/2 cup heavy cream or creme fraiche
  • Fried bread slices
  • 1 tsp salt
  • 1/4 tsp black pepper

Serves/Makes: 4-6

Simmered Creamed Cod Recipe

How to cook Simmered Creamed Cod:

  • Wash cod fish very well.
  • Place the fish in a pan with water to cover. Add the lemon slices and bring to boil over high heat.
  • When the surface becomes foamy, cover, reduce heat and simmer for about 15 minutes.
  • Drain fish and reserve the liquid. Let cool slightly, then skin the fish, remove the bones and set aside keeping it warm.
  • In the same liquid, cook 3 potatoes until tender, for about 30 - 40 minutes. Drain, peel and mash with a fork or in a blender. Set aside.
  • Heat half cup of the oil and mash the fish with a wooden spoon in the oil.
  • Stir in the potatoes, stirring rapidly with wire whisk until well blended and a smooth. In order to prevent curdling a few drops of cold water may be added.
  • Heat another half cup of the oil and add to the mixture and simmer, stirring until a very smooth paste is formed.
  • Season with the salt, pepper, lemon juice and pressed garlic. Stir in the heavy cream or creme fraiche.
  • Transfer the mixture to the top of a double boiler and place over hot water. Stir until hot.
  • Pour into a serving dish and surround it with the fried bread.

Notes:

How to clean Cod:

Scale the fish by placing it in the sink under cold running water. Grasp the fish firmly by the gills and scrape off scales starting from the tail to the head with a fish scaler or small, dull knife using short strokes.
    To remove the head, cut the flesh on both sides with a knife. If the fish is small, slice directly through the spine. For a larger fish, place the knife between vertebrae and tap the back of the knife with a hammer.
