Poached Pike Polish Style.


The pike has lean, low fat, firm flesh, which is yellow when raw but flaky white when cooked. One disadvantage of the pike is that it is bony. They inhibit fresh waters but its flesh is as nutritious as that of saltwater fishes. The pike is low in saturated fat, no sugar, very high in manganese, phosphorus, selenium, and in vitamin B12, high in calcium, niacin, potassium, and in thiamin.

Pike Recipe - Polish recipe how to cook northern pike with carrot, onion, celery, peppercorns, butter, eggs, lemon juice, and fresh dill or parsley.

Ingredients:

  • 1 fresh Northern Pike, (about 2 pounds), dressed
  • 1 carrot
  • 1 onion
  • 1 stalk celery
  • 10 peppercorns
  • 1 1/2 tsp salt

Topping Ingredients:

  • 1/4 cup butter
  • 6 hard-boiled eggs, finely chopped
  • 1/4 cup lemon juice
  • 1 tbsp fresh dill or parsley, chopped
  • 3/4 tsp salt
  • 1/4 tsp pepper

Serves/Makes: 4 - 6


Poached Pike Polish Style Recipe

How to cook Poached Pike Polish Style:

  • Wash the pike thoroughly under cold running water.
  • Place pike in salt water and let it soak for 10-15 minutes.
  • Rinse well under cold running water, drain it well.
  • Put northern pike into a large kettle. Add carrot, onion, celery, peppercorns, and salt. Add water enough to cover.
  • Cover and boil gently about 15 to 20 minutes, or until fish flakes easily.
  • Meanwhile, heat butter in skillet. Add chopped eggs, lemon juice, dill, salt and pepper. Cook 5 minutes, stirring frequently.
  • When fish is cooked, set it on a warm platter. Spoon topping over fish.
  • Serve the Northern Pike Polish Style with boiled potatoes.
