Honey Mustard Baked Arctic Char with Shiitake Tasty Recipe.


Arctic Char has a highly priced delicate, mild flavor with a firm texture and fine flake. The flesh varies in color and may be red to pale pink, with the bright red commanding the highest price. A delightfully sweet flavor, delicious skin and a huge portion of life-saving Omega oils, also rich in calcium, phosphorus, potassium, sodium and vitamin B.
    Char is an excellent source of heart healthy Omega-3 fatty acids, it may contain higher levels than salmon. Per 3.5 oz (100 g) raw edible portion it contains 104 Calories, 3.6 g Total Fat, 58 mg Sodium, 16.7 mg Protein, 309 mg Potassium, 0.3 mg Iron, and 0.37 g Omega-3.

Baked Arctic Char Recipe - Recipe how to bake Arctic char fillets with honey mustard, shiitake mushroom, shallots, parsley, ginger, garlic, sesame oil, and White wine.

Ingredients:

  • 4 fresh Arctic Char fillets (about 6 ounces each)
  • 5 tablespoons Honey mustard
  • 15 ea. fresh shiitake mushroom, stems removed and tops julienne
  • 1/2 tablespoon fresh garlic, minced
  • 4 tablespoons sesame oil
  • 1 tsp fresh shallots, finely diced
  • 1/2 tablespoon fresh parsley, minced
  • 1 tablespoon fresh ginger, grated
  • 4 tablespoons white wine
  • Salt and pepper to taste

Serves/Makes: 4

Honey Mustard Baked Arctic Char with Shiitake Recipe

How to cook Honey Mustard Baked Arctic Char with Shiitake:

  • In a preheated saute pan, add enough sesame oil to coat the bottom, saute garlic, shallots and ginger with the shiitake mushrooms, then add white wine, salt and pepper.
  • Cook ingredients until mushrooms are tender.
  • Remove from heat, mix in parsley and leave mixture in a small bowl to cool. Set aside.
  • In a preheated saute pan, add enough sesame oil to coat bottom of pan.
  • Add the Arctic char fillets and lightly brown each side of the fillet, taking care not cook them.
  • Remove from heat and place Arctic char fillets onto a baking sheet.
  • With a pastry brush, coat each fillet with honey mustard, then take the mushroom mixture and gently press an even amount of the mixture on top of each Arctic char fillet.
  • Preheat oven to 350°F.
  • Bake the Arctic char fillets in an oven for approximately 10 -12 minutes until fillets texture would flake lightly with fork.

How to fillet Arctic Char:

With their thin skin and tiny scales, char do not need scaling and are often cooked whole. To fillet larger fish, place the char lying on its side; insert the sharp, thin knife behind the gills, and cut in an arc down to just above the backbone. Continue cutting parallel to the backbone toward the tail. Bring the knife up at the tail and remove the fillet.
