Grilled Tautog / Blackfish in marinate Easy Recipe.


Blackfish or Tautog are an excellent tasting fish with firm, pure white meat. Its flesh is white, dry, and of a delicate sweet flavor. It may grilled, broiled ot baked. And its firm flesh makes it especially suitable for fish chowder. The lean, firm flesh is excellent when it is skinned and filleted. Due to it's firmness, however, it is important not to overcook tautog as it will tend to be tough, chewy, and lacking in flavor.
Low in fat and healthy fish, uncooked tautog Per 3.5 ounces (100 grams) provide: Calories 164, calories from Fat 85.23, Total Fat 9.47 grams, Saturated Fat 3.51 g, Cholesterol 50 mg, Carbohydrate 0 grams, Sodium 65 mg, Protein 18.48 grams (18.6%), Omega-3 0.57 grams.

Grilled Blackfish marinated in lemon juice, olive oil, parsley, rosemary, and dill is a fine dish that comes from the grill succulent and full of flavor. Blackfish or Tautog is the best fish for grilling with its very mild, firm white flesh.

Ingredients:

  • 1 whole fresh Tautog / Blackfish, gutted and cleaned (about 1 1/2 lbs)
  • 2 tbsp of lemon juice
  • 1/4 cup of virgin olive oil
  • 1 tbsp of minced parsley
  • 1 tbsp of rosemary
  • 1 tbsp of dill

Serves/Makes: 3-4

How to cook Grilled Tautog / Blackfish in marinate:

  • Place whole fish in salt water and let it soak for 30 minutes. Wash well, then rinse and pat dry with paper towels.
  • Mix all the ingredience: minced parsley, rosemary, dill, olive oil and lemon juice in bowl. Or make a marinade of 1/2 cup of bottled Italian dressing thinned with 2 tablespoons of lemon juice or white wine vinegar.
  • Marinate the fish in the mixture.
  • Put the fish and marinade in a self-sealing plastic bag.
  • Refrigerate for no more than 1/2 hour. Marinating too long will spoil the flavor and texture of fish.
  • Drain the fish and pour the marinade into a small pan and heat at the side of the grill to brush on the fish while grilling.
  • Do not overcook, fish cooks fairly quickly. Depending on thickness, it will need only between 4 and 15 minutes.
  • Use a wide oiled spatula to turn the fish on the grill.
  • The flesh near the center should almost flake and should be moist when tested with a fork.
  • Serve immediately, ganish with parsley and rosemary.

  • 1/4 cup butter
  • 3 tbsp chopped parsley
  • 3 tbsp tarragon chives
  • 1/4 tsp grated lemon zest
  • 2 tsp lemon juice
  • 1/8 tsp cayenne
  • 1/8 tsp salt
