Arctic Char has a highly priced delicate, mild flavor with a firm texture and fine flake. The flesh varies in color and may be red to pale pink, with the bright red commanding the highest price. Grilled Arctic Char Recipe - Recipe how to grill Arctic char fillets with olive oil, lemon juice, white wine, shallots, fresh basil, ground coriander, and Jalapeno-Honey Tartar Sauce.

Ingredients:

  • 4 fresh Arctic Char fillets (about 6 ounces each), skin on
  • 1 cup olive oil
  • 1 cup lemon juice
  • 1 cup white wine
  • 3 medium shallots, finely chopped
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon ground coriander
  • Fresh ground pepper to taste

How to cook Grilled Arctic Char with Jalapeno-Honey Tartar Sauce:

  • Season char with sea salt.
  • Blend all of the ingredients together.
  • Pour marinade over the Arctic char fillets and leave for 30 minutes, turning once.
  • Remove from the marinade and grill as desired.
  • Serve the grilled Arctic char fillets with the Jalapeno-Honey Tartar Sauce (see below).

Jalapeno-Honey Tartar Sauce:

  • 4 fresh Arctic Char fillets (about 6 ounces each), skin on
  • 1 cup olive oil
  • 1 cup lemon juice
  • 1 cup white wine
  • 3 medium shallots, finely chopped
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon ground coriander
  • Fresh ground pepper to taste
  • Combine all ingredients and blend thoroughly.

    How to fillet Arctic Char:

    With their thin skin and tiny scales, char do not need scaling and are often cooked whole. To fillet larger fish, place the char lying on its side; insert the sharp, thin knife behind the gills, and cut in an arc down to just above the backbone. Continue cutting parallel to the backbone toward the tail. Bring the knife up at the tail and remove the fillet.
