Arctic Char has a highly priced delicate, mild flavor with a firm texture and fine flake. The flesh varies in color and may be red to pale pink, with the bright red commanding the highest price. A delightfully sweet flavor, delicious skin and a huge portion of life-saving Omega oils, also rich in calcium, phosphorus, potassium, sodium and vitamin B.
    Char is an excellent source of heart healthy Omega-3 fatty acids, it may contain higher levels than salmon. Per 3.5 oz (100 g) raw edible portion it contains 104 Calories, 3.6 g Total Fat, 58 mg Sodium, 16.7 mg Protein, 309 mg Potassium, 0.3 mg Iron, and 0.37 g Omega-3.

Grilled Arctic Char Recipe - Recipe how to grill whole Arctic char with oil, basil, rosemary leaves, flat leaved parsley, and dill. Serve with pureed potatoes and tomato-fennel sauce.

How to cook Grilled Arctic Char with Herbs:

  • Blend the oil and herbs in a food processor until they make a smooth herb oil.
  • Season with a little salt and pepper in the belly of the whole Arctic char.
  • Brush the whole Arctic char with the herb oil and grill it on the barbecue or in a grill pan.
  • Brush during grilling with the herb oil.
  • Serve the grilled whole Arctic char with pureed potatoes and Tomato-Fennel sauce.

Potato Puree Recipe

Potato Puree Ingredients:

  • 2 pounds small potatoes
  • 1 1/2 cup milk
  • 3/4 cup cream
  • 3 tablespoons butter

How to cook Potato Puree:

  • Boil peeled potatoes in unsalted water until tender, and press them through a sieve or a potato press until pureed.
  • Heat milk, cream and butter in a saucepan and stir gradually into the mashed potato.
  • Season with salt and pepper to taste.
  • The puree is delicious served mixed with a little chives.

Tomato-Fennel sauce Recipe

Tomato-Fennel sauce Ingredients:

  • 4 plum tomatoes
  • 2 tablespoons tomato puree
  • 2 fennel
  • 1/2 shallot
  • Olive oil

How to cook Tomato-Fennel sauce:

  • Roughly chop the vegetables and mix them with tomato puree and olive oil.
  • Bake the vegetables in the oven at 350ºF for around 15 – 20 minutes until tender.
  • Blend the vegetables in a food processor and season with salt and pepper to taste.

How to fillet Arctic Char:

With their thin skin and tiny scales, char do not need scaling and are often cooked whole. To fillet larger fish, place the char lying on its side; insert the sharp, thin knife behind the gills, and cut in an arc down to just above the backbone. Continue cutting parallel to the backbone toward the tail. Bring the knife up at the tail and remove the fillet.
