Ingredients:

  • 4 fresh whole trouts, cleaned
  • 2 tomatoes, peeled, seeded and finely chopped
  • 1 zucchini, cubed
  • 1 sweet red or yellow pepper, cubed
  • 2 tbsp (30 mL) lemon juice
  • 2 tbsp (30 g) margarine
  • 1 clove garlic, finely minced
  • Rind of 1 lemon
  • 1/2 tsp (2.5 mL) thyme
  • Salt and pepper, to taste

How to cook Barbecued Trout Wrapped with Vegetables:

  • Place fish in salt water and let it soak for 20-30 minutes.
  • Rinse fish and pat dry with a paper towel.
  • Grease 4 sheets aluminum foil large enough to enclose the fish with margarine.
  • Line trouts onto aluminum foil.
  • Evenly top each trout with chopped tomatoes, zucchini cubes, pepper cubes, minced garlic, lemon juice and lemon rind.
  • Add Salt and pepper to taste, sprinkle with thyme.
  • Tightly wrap each trout.
  • Barbecue wrapped trouts over medium coals, for 10 to 15 minutes.
  • Open packet and if you can flake fish with a fork, it is done
