Baked Salmon with Papaya Cucumber Sauce Recipe.


Salmon is very healthy due to the it's high protein, high Omega-3 fatty acids, and high vitamin D content. Salmon flesh is usually orange to red, but could be white fleshed wild salmon. The natural colour of wild salmon is coming from eating krill and other tiny shellfish. They change the color and a meat quality when entering freshwater.
Cooked Salmon, dry heat, 1/2 fillet (5.4 oz/153g) provide 280 Calories, 39g of Protein, 0.0g of Carbohydrate, 12.5g of Total Fat, 0.0g of Fiber, 967mg of Potassium, 72mcg of Selenium, 15.5mg of Niacin and 57mg of Magnesium, 3.394 grams of omega-3 fatty acids, derived from Eicosapentaenoic Acid (0.629g), Docosahexaenoic Acid (2.186g), Alpha Lipoic Acid (0.578g).

Baked Salmon Recipe - Oven baked salmon stuffed with mushrooms and spinach, served with papaya cucumber sauce.

Ingredients:

  • 1 fresh whole Salmon
  • 2 cups (500 mL) mushrooms, freshly sliced
  • 1/3 cup (80 mL) green onion, finely chopped
  • 1 tsp (5 mL) olive oil
  • 2 cups (500 mL) well packed spinach, freshly chopped
  • 1 lemon, thinly sliced
  • 1/4 cup (60 mL) dill, freshly chopped
  • Salt and pepper, to taste
  • 8 fresh dill sprigs

Baked Salmon with Papaya Cucumber Sauce Recipe

How to cook Baked Salmon with Papaya Cucumber Sauce:

  • Preheat oven to 400°F (200°C).
  • Wash and delicately dry fish arrange fish into a greased oven-proof pan.
  • Into a microwave safe dish, mix together mushroom slices and chopped green onion.
  • Sprinkle with olive oil.
  • Microwave together mushroom slices and chopped green onion on 'MAXIMUM', for 2 minutes.
  • Then saute mushroom slices and green onions into a frypan, over medium heat.
  • Mix in freshly chopped spinach.
  • Stuff fish with mixture do not secure opening(s).
  • Arrange lemon slices all over fish sprinkle with freshly chopped dill, salt and pepper.
  • Bake into preheated oven for 25 minutes.
  • Meanwhile, prepare papaya cucumber sauce.
  • Skin fish discard.
  • Using 2 spatulas, delicately transfer fish onto a large serving plate.
  • Pour papaya cucumber sauce all around and Serve.

Papaya Cucumber Sauce Ingredients:

  • 2 cups (500 mL) English cucumber dices, unpeeled
  • 2 cups (500 mL) papaya dices, peeled
  • 2 tbsp (30 mL) white wine vinegar or lime juice
  • 2 tbsp (30 mL) dill, freshly chopped
  • Pepper

How to cook Papaya Cucumber Sauce:

  • Into a large bowl, mix together English cucumber and papaya dices, white wine vinegar or lime juice and chopped dill.
  • Pepper to taste.
  • Just before serving, drain mixture.
