Sea bass is a very tasty fish, with relatively few, easy-to-remove bones and firm flesh that holds its shape when cooked. On the plate, branzino has mild, fairly firm white flesh. Ingredients:

  • 1 whole fresh European Sea Bass / Branzino, about 2 pound
  • 1 1/2 pounds potatoes, thinly sliced (Yukon gold is the best)
  • Extra-virgin olive oil
  • 1/4 cup cured black olives, chopped
  • 4 sprigs thyme, finely chopped
  • 2 cloves garlic
  • 2 cups diced fresh tomatoes
  • Salt and pepper to taste

Baked European Sea Bass with Potatoes Easy Recipe

How to cook Baked European Sea Bass with Potatoes:

  • Place whole fish in salt water and let it soak for 30 minutes.
  • Wash Sea Bass well; rinse and pat dry with paper towels.
  • Preheat oven to 400°F.
  • Arrange an overlapping layer of thinly sliced potatoes in a baking dish coated with olive oil.
  • Mix all the ingredients: finely chopped thyme, garlic, salt, pepper, and extra-virgin olive oil.
  • Sprinkle potatoes with a mixture.
  • Repeat to make a second layer. Cover and bake for 20 minutes
  • Season sea bass with salt and pepper and rub with olive oil.
  • Lay the fish over the potatoes and sprinkle with diced tomatoes and chopped cured black olives around the fish.
  • Bake for 30 minutes or until the fish flakes and the potatoes are soft.
