Baked Arctic Char Marinated in Gin Tasty Recipe.


Arctic Char has a highly priced delicate, mild flavor with a firm texture and fine flake. The flesh varies in color and may be red to pale pink, with the bright red commanding the highest price. Baked Arctic Char Recipe - easy Canadian recipe how to bake Arctic Char fillets marinated in Bombay Sapphire Gin, Kosher salt, granulated sugar, and red beet.

Ingredients:

  • 6 wild fresh Arctic Char fillets (about 6 ounces each)
  • 2 ounces Bombay Sapphire Gin
  • 1/2 cup Kosher salt
  • 1/4 cup of granulated sugar
  • 1 medium sized red beet
  • 2 teaspoons canola oil
  • Salt and white pepper to taste

Baked Arctic Char Marinated in Gin Recipe

How to cook Baked Arctic Char Marinated in Gin:

  • Juice the red beet and mix in the gin, Kosher salt and granulated sugar.
  • In a shallow pan, marinate the Arctic Char, skin side up for at least 1 1/2 hours until it bacame slightly reddish but still orange. The mixture should be coarse resembling a gravlax.
  • Remove it from the mixture and rub off the excess marinate with a paper towel then season lightly with salt and white pepper.
  • Preheat a non-stick pan and place 2 teaspoons of canola oil.
  • Once hot, place the Arctic Char into the pan and give just a slight shake of the pan to make sure the fish doesn’t stick.
  • Place into a 350ºF oven for about 5 minutes then flip and continue in oven for another 3 minutes or earlier if you want it medium to medium-well doneness. If you want it well done, contnue in the oven for a little longer

How to fillet Arctic Char:

With their thin skin and tiny scales, char do not need scaling and are often cooked whole. To fillet larger fish, place the char lying on its side; insert the sharp, thin knife behind the gills, and cut in an arc down to just above the backbone. Continue cutting parallel to the backbone toward the tail. Bring the knife up at the tail and remove the fillet.
