Avocado Stuffed with Smoked Salmon African Recipe.


Salmon is very healthy due to the it's high protein, high Omega-3 fatty acids, and high vitamin D content. Salmon flesh is usually orange to red, but could be white fleshed wild salmon. The natural colour of wild salmon is coming from eating krill and other tiny shellfish. They change the color and a meat quality when entering freshwater.
Cooked Salmon, dry heat, 1/2 fillet (5.4 oz/153g) provide 280 Calories, 39g of Protein, 0.0g of Carbohydrate, 12.5g of Total Fat, 0.0g of Fiber, 967mg of Potassium, 72mcg of Selenium, 15.5mg of Niacin and 57mg of Magnesium, 3.394 grams of omega-3 fatty acids, derived from Eicosapentaenoic Acid (0.629g), Docosahexaenoic Acid (2.186g), Alpha Lipoic Acid (0.578g).

Salmon Recipe - African recipe using smoked salmon, hard-boiled eggs, milk, lime juice, sugar, vegetable oil, olive oil, avocados, red bell pepper or pimentos, and West African Pili-Pili Sauce.

Ingredients:

  • 1/2 pound smoked Chinook Salmon, flaked
  • 2 large ripe avocados
  • 4 hard-boiled eggs
  • 1/4 cup milk
  • 1/4 cup lime juice
  • 1/4 tsp sugar
  • 1/3 cup vegetable oil
  • 2 tbsp olive oil
  • 1 red bell pepper or 1 can pimentos (cut in strips)
  • 1/4 cup West African Pili-Pili Sauce
  • 1/2 tsp salt

Avocado Stuffed with Smoked Salmon African Recipe

How to cook African Avocado Stuffed with Smoked Salmon:

  • Peel the hard-boiled eggs and take out the egg yolks.
  • Rub the yolks through a sieve and mash it in a large deep bowl. Mix in the milk with a table fork until it forms a smooth paste.
  • Add 1 tablespoon of the lime juice, sugar, salt to taste and mix it well.
  • Pour in the vegetable oil and the olive oil by a teaspoon at a time, beating constantly to make sure each addition is absorbed before adding more.
  • Stir the rest of the lime juice into the sauce and seasoning to taste.
  • Remove the skin and bones from the fish, place it into a bowl and flake it finely with a fork, add the finely chopped egg whites and mix it well.
  • Add the smoked salmon and egg whites to the sauce toss gently and thoroughly.
  • Refrigerate mixture and then just before serving, cut avocados in half, take out seeds and all the brown fibers by pricking them with the point of the knife.
  • Spoon the salmon mixture into avocado halves, dividing it equally among them, and top with scalions and olives.
  • Spoon the hot sauce over the dish and serve immediately.

Note:

The African Avocado Stuffed with Smoked Salmon recipe is from the Democratic Republic of Congo, where it is known as Senegalese Quiche.

Tips:

You can use another hot sauce instead of West African Pili-Pili Sauce to serve over the African Avocado and Smoked Salmon dish.
