Almond Haddock Balls Tasty Recipe.


The meat of the Haddock is lean and white, a little less firm than cod and flakes beautifully when cooked. Smoked haddock naturally has an off-white color and it is very often dyed yellow. Haddock is an excellent source of dietary protein. It also contains a good deal of vitamin B12, pyridoxine, and selenium, and a healthy balance of sodium and potassium, with very little fat. 100 grams of cooked (dry heat) haddock provides 0.159 grams of omega-3 fatty acids derived from EPA (0.004g), DHA (0.154g), and ALA (0.001g).

Ingredients:

  • 8 oz smoked Haddock fillets, skinned
  • 8 oz cod fillets, skinned
  • 1 onion, finely minced
  • 1/2 sweet green peppper, finely minced
  • 2 1/2 oz breadcrumbs
  • 1 tsp chopped chives
  • 2 beaten eggs
  • 2 tbsp all-purpose flour
  • 4 oz blanched almonds, chopped and lightly toasted
  • 1 tsp paprika
  • salt and freshly ground black pepper, to taste

Serves/Makes: 4

Almond Haddock Balls Recipe

How to cook Almond Haddock Balls:

  • In a bowl, microwave together minced onion and sweet green pepper, for 4 to 5 minutes on 'MAXIMUM' (Oven: 700 watts), stirring once.
  • Cut cod and smoked haddock fillets into pieces; arrange onto a plate.
  • Cover and microwave fish for 5 minutes on 'MAXIMUM'.
  • Crumble fish, removing bones.
  • Mix thoroughly in breadcrumbs, salt and pepper, paprika, chopped chives and beaten eggs.
  • Form mixture into small balls and roll thoroughly in flour.
  • Coat balls with chopped almonds freeze.
  • To Serve thaw and reheat fish balls, moving balls a few times, until hot, approximately 16 minutes all together.
  • Leave to rest for 1 to 2 minutes.
  • Meanwhile, reheat sauce for 1 to 2 minutes, at 'MAXIMUM'.

Sauce Ingredients:

  • 3 tsp cornstarch
  • 2 tbsp tomato paste
  • 1 1/4 cups tomato juice
  • 3/4 cup chicken broth
  • 1 garlic clove, crushed
  • 1 bay leaf
  • 1 tbsp Worcestershire sauce

How to cook Saice:

  • Mix together all sauce ingredients.
  • Microwave, covered, for 5 minutes on 'MAXIMUM', strring after after 2 minutes and then every 30 seconds.
  • Throw away bay leaf.

Notes:

This recipe for Almond Haddock Balls serves/makes: 4. It is delicious and versatile, simple and very affordable dish. it could be done in 700 watts oven.
