  • 2 tbsp dry red wine

  • 1/2 cup onion, finely-chopped
  • 1/4 cup green pepper, finely-chopped

How to cook Baked Flounder Provencale:

  • Place the fillets in salt water and let it soak for 10 minutes.
  • Rinse well under cold running water, drain it well.
  • Put the tomatoes, onion, green pepper, mushrooms, celery, parsley flakes, bay leaf, garlic powder, basil leaves, salt, flour, and wine in a 1-quart covered casserole.
  • Mix well and cook, covered, in the microwave oven for 10 minutes, stirring occasionally. Arrange the fish in an 8-inch baking dish or in 4 individual ramekins.
  • Cover with the sauce; cook in the microwave oven, lightly covered with wax paper, until the fish will flake (about 8 to 12 minutes).
  • Sprinkle on the quartered olives and the Parmesan cheese. Cook 1 minute longer to heat through.
