Simmered Creamed Cod Tasty Armenian Recipe.
Cod meat is white in color, is moist and lean, medium- to firm-textured, and delicately
flavorful with a mild taste. Tender, thick fillets with large flakes that separate when
cooked. Cod is a good source of low fat protein, phosphorus, niacin, and vitamin B12, an
important source of vitamin A, vitamin D, vitamin E and omega-3 fatty acids (EPA and
DHA).

Ingredients:
- 2 pounds fresh Cod
fish
- 3 medium potatoes, halved
- 1/2 cup heavy cream or creme fraiche
- 1 lemon, sliced
- 1 cup olive oil
- 2 tablespoons lemon juice
- 2 garlic cloves, pressed
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- Fried bread slices

How to cook Armenian Simmered Creamed Cod:
- Wash the fish with cold running water.
- Place the fish in a pan. Add water to cover the fish, lemon slices and bring to
boil over high heat.
- When the surface becomes foamy, reduce heat, cover and simmer for about 15
minutes.
- Drain the fish, set it aside and keep warm. Reserve the liquid.
- Wash potatoes good. Cook potatoes in the same liquid until done (for 30 - 40
minutes). Drain and peel. Mash with a fork or in a blender and set aside.
- Skin the fish and remove the bones. Heat half cup of the oil.
- Place the fish in a pyrex dish (to prevent discoloring) and mash the fish with a
wooden spoon in the oil.
- Stir in the potatoes, beating until well blended and a smooth paste is formed.
To prevent curdling a few drops of cold water may be added.
- Heat the remaining oil and add to the mixture and continue beating until a very
smooth paste is formed. Season with the salt, pepper, lemon juice, garlic. Stir
in the heavy cream or creme fraiche.
- Transfer the mixture to the top of a double boiler and place over hot water.
Stir until hot.
- Pour into a serving dish, mounding it like a dome, and surround it with the
fried bread, cut into half-moon shapes.

How to clean Cod:
Scale the fish by placing it in the sink under cold running water. Grasp the fish firmly
by the gills and scrape off scales starting from the tail to the head with a fish scaler
or small, dull knife using short strokes.
To remove the head, cut the flesh on both sides with a knife. If the fish is small,
slice directly through the spine. For a larger fish, place the knife between vertebrae
and tap the back of the knife with a hammer.
